    Mango with Sweet Fish Sauce

If you have a chance to come to Thailand, you will amaze that we have fruits all year...In the past if you want to eat mango, you should come here around April to June but today you can come anytime cause we can produce it outside its season...that's mean to many kinds of Thailand fruit such as Durian, Jackfruit, Pineapple etc...

Today I will cook sweet fish sauce for eating with sour unripe mango.
    1/2 cup of palm sugar
    1/2 cup of brown sugar
    1/4 cup of water
    Fish sauce
    1 tablespoon of shrimp paste
    1/2 cup of dried shrimp
    2 tablespoon of chili powder
    5 of dried chili
    Shallot, chop
    Bird chili, chop
    Sour unripe mango
    1. Mix palm sugar, brown sugar and water then simmer it until sugar melt.
    2. Add fish sauce, shrimp paste and continue simmer until it concentrate and sticky then add chili powder.
    3. Turn off fire and leave it cool. Then add dried shrimp, dried chili, chopped bird chili, chopped shallot and stir until it mix well.
    4. Serve with unripe mango.
