Nim with Sweet Fish Sauce (Sadao Nam Plan Wan)

Nim's top and blossom can eat as vegetable by boil or burn it. It can eat with Thai chili dipping sauce but central Thai people always eat it with sweet fish sauce and grilled catfish because it can reduce its bitter taste. Even its taste very bitter but its nutritions very useful for your health.
    Ingredients for sweet fish sauce
    2 cup of palm sugar
    1/2 cup of tamarind juice
    1/2 cup of fish sauce
    1/4 cup of parch garlic
    1/4 cup of parch shallot
1/4 cup of dried chili, slice and fry
    Cooking sweet fish sauce
    1. Mix palm sugar, fish sauce and tamarind juice then put it on fire and simmer it until it sticky.

    2. Clean nim and boil it in hot water for a while then soak it in cool water at once.

    3. When serve add parch garlic, shallot and dried chili to sticky sauce.

    4. Normally we also serve with grilled-catfish.

I translate from Thai language, actually I never do it by myself....just look my mother do....when serve on table I eat only grilled catfish...cause Nim or Sadao too bitter for me...I don't know why my parents love it so muchhhh
