Hot and Spicy Soup Isan Style (Tom Sab)
Normally, foreigner will be familiar with Hot and Spicy Soup Bangkok Style or Tom Yum Kung but each part of Thailand has different of taste and style. Today I will show you Hot and Spicy Soup in North Eastern or Isan Style.
Ingredients
300 g of cartilage bone of pork
Parsley, chop
Glasslemon, slice
Galangal, slice
Kaffir lime leaves, chop
Shallot, burn or parch
Chili powder
Bird chili, pound
Fish sauce
Lemon juice
Corainder for sprinkle
Directions
1. Clean pork cartilage bone by add salt to water, it can reduce freshy smell and then chop it.
2. Pour water to pot and put it on fire then wait until it boil. After that add pork cartilage bone and boil until it rot or about 30 minutes.
3. When it rot add parsley, glasslemon, galangal, kaffir lime leaves, shallot and boil for a while.
4. Seasoning with lemon juice, fish sauce, bird chili and chili powder then taste it. The taste you can season as you want.
5. Turn off the fire and laddle it to bowl then sprinkle with corainder.
6. Serve with warm jasmine rice.

Hello, just want to add some comment kha. This recipe is also good for beef as well. Especially when you slow cook it until the meat is tender.... ummmm
zab.... (yummy) And sometime people make this soup bowl by bowl, I mean season it. So they add lime juice, chili powder in the bowl, that way is also help preserve vitamin C and the fragrance of lime kha.

"Saeb" indeed... we often used fish, too. I think one could use almost anything. My friend who is vegetarian just uses more and different kinds of mushrooms instead of the meat.
...And with the leftovers I often make tom yum flavored fried rice!life is wonderful!
