    Southern rice salad

    I'm wanting to try the southern rice salad Khao yam pak tai in Bangkok. Does anyone know where they might serve it? I'm making it at home and love it, but I'd like to know what it's supposed to taste like.

    Kow Yum Pak Tai

    Ingredients :

    6 cups cooked long-grain brown or jasmine rice
    1 boiled egg
    1 cup shredded or flaked unsweetened coconut, toasted
    1 cup nice dried shrimp flakes
    1 tablespoon ground dried red chili flakes

    Vegetable:


    1 cup fresh green beans, thinly sliced crosswise
    1 cup sators (Stink bean)
    1 cup peeled and diced fresh cucumber (seeded if desired)
    1 cup fresh bean sprouts
    1 cup fresh pomelo
    1 cup fresh lemongrass ,very thinly sliced
    1 cup rare green mango, long thinly sliced
    6 -10 wild lime leaves, sliced crosswise into very thin strips (optional)


    Dressing :

    3 tablespoons num Budu
    1 1/4 cup water
    1 piece of salted Spanish Mackerel fish (or 2 fresh Short-bodied Mackerel)
    1 cup brown sugar
    1 stalk of fresh lemongrass, thinly sliced
    3 Kaffir lime leaves , thinly sliced
    1 coriander root, thinly sliced
    1 inch cube galangal (kha) , thinly sliced
    3 red onions, slightly crushed

    - Boil Spanish Mackerel fish until become tender, tear the fish and reserve.
    - Clove of all ingredients (except Num Budu, sugar) in the mortar until rough blending.
    - Heat the water, add fish meat , Num Budu and all ingredients, lower the heat to keep it simmering until nice thick (take long time) .
    - After cold, filter with white cheer fabric.


    Place rice on the serving platter that lined with boiled egg, all salad ingredients and vegetables. Serve with dressing on the side.

    Thanks for that Anatta. This recipe has more lemongrass than I would have imagined.

    Do you know of any restaurant in Bangkok that might serve this? I'm going there in January, and would love to eat the real thing in Thailand.
