Physical properties
Coconut oil is a fat consisting of about 90% saturated fat. The oil contains predominantly medium chain triglycerides,[1] with roughly 92% saturated fatty acids, 6% monounsaturated fatty acids, and 2% polyunsaturated fatty acids. Of the saturated fatty acids, coconut oil is primarily 44.6% lauric acid, 16.8% myristic acid a 8.2% palmitic acid and 8% caprylic acid, although it contains seven different saturated fatty acids in total. Its only monounsaturated fatty acid is oleic acid while its only polyunsaturated fatty acid is linoleic acid.[2]
Unrefined coconut oil melts at 24-25°C (76°F) and smokes at 170°C (350°F),[3] while refined coconut oil has a higher smoke point of 232°C (450°F).
Among the most stable of all oils, coconut oil is slow to oxidize and thus resistant to rancidity, lasting up to two years due to its high saturated fat content.[citation needed] It is best stored in solid form, below 24.5°C (76°F) in order to extend shelf life. However, unlike most oils, coconut oil will not be damaged by warmer temperatures.
Dietary consumption issues
The high proportion of saturated fats found in coconut oil places individuals at risk for heart attacks. [4][5] The World Health Organization has determined that reduced consumption of saturated fat, including that from coconut oil, would positively affect health and reduce the prevalence of heart attacks,[6] and epidemiological studies have found that diets high in saturated fatty acids, including lauric, myristic, palmitic, and stearic acid, found in coconut oil, were strong predictors of coronary heart disease risk.[7][8]

In the U.S., coconut oil is sold in quart jars, the same size as mayonnaise. Of course, in our climate, it's hard as rock...

I know quite a lot of small food stalls that use tinned carnation milk instead of coconut milk to make dishes like pad prik gaeng :(
But one more amazing coconut fact I remembered from my coconut guru...
During WWII somewhere in the pacific they ran out blood plasma and desperately needed some for transfusions. What did they use? Coconut water. Did the people survive? Yes! Thats how good it is, you can intravenously put it into your body and it will go straight to work.

Saturated but healthy
Despite the anti-coconut oil campaigns, there have been a number of scientific studies in the US on coconut oil which view coconut oil in a much more favourable light than the ones cited by the American Soybean Association.
Dr Narong says the reseach shows that the saturated fats of coconut oil are unique and cause no health problems.
"As the studies note, not all saturated fats are alike. Each has a different structure, giving it different qualities."
Dr Narong said a good quality of coconut oil is that it contains lauric acid, which is essential in building and maintaining the immune system in the human body.
"Lauric acid is also found in mother's milk, the richest food source for the new born baby," Dr Narong commented. "Lauric acid is also known for its ability to fight dangerous micro-organisms - bacteria, yeasts or fungi - and viruses. Another important quality of coconut oil is that it is comprised of medium-chain fatty acids, which are easily digested. This is good for the liver and the entire digestive system.
"It is processed in the liver and converted into energy. Meanwhile, other oils have long chain fatty acids which cannot be digested so easily. They will be deposited in fat cells, and take time to burn off, leading to obesity," he said.
"I have studied this scientific research extensively, and at the same time we have examples from people who have traditionally used coconut oil in their daily lives," he said.
Dr Narong noted that coconut oil is used in our local medicines and that people on Tahiti and other islands in the South Pacific use coconut oil on their highly praised and healthy skin and hair.
Dr Narong noted that virgin coconut oil is promoted for weight loss, but this is still debatable among nutritionists. While the arguments go on, Dr Narong and his team at the COCDS are setting up a test project.
With cooperation from doctors, nutritionists and a coconut oil producer, 30 overweight volunteers, following a complete medical check-up, will be provided with virgin coconut oil. "They will take two table spoons before breakfast, lunch and dinner," he explained.
Dr Narong himself is a big believer in virgin coconut oil.
"Virgin coconut oil has become my daily food in the past years. I take two table spoons mixed with orange juice every day. At the age of 74, I can play two or three games of tennis on the weekend," he said.
Virgin coconut oil is now used by many sports teams as a quick source of energy, which may explain how during the week Dr Narong gets up at four every morning and arrives at his office at five to perform his duties as editor of a technology journal at Assumption University. After he gets off at three in the afternoon, he often gives lectures and training sessions to the public on how to produce virgin coconut oil.

Coconut oil works so perfectly with my skin, din't know we can eat also.
I bought if from the website that sell many kinds of natural oid including jojoba oil and primrose oil.
Back to the basis, natural is the best `!!!!

Plus that, if I drink a cup of it then I have the skidders for a few hours, as I have seen that farang can not tolerate to much of it, which I believe to be true.Talking about the coconut milk calorie, 1 cup canned coconut milk contains 445 calories, whereas frozen milk contains 485 calories. Raw coconut milk contains the maximum number of calories, which are approximately 552. Coconut milk is available in the market in different styles of packaging like cans and tetra packs.

Bangkok Post TUNYA SUKPANICH
Dr Narong Chomchalow was born on August 26, 1933 in Bangkok. He received a Bachelor's degree in agriculture from Kasetsart University in 1957. In 1964, he received a doctorate in Botany from the University of Chicago in the USA.
In 1983, he resigned from the Thailand Institute of Scientific and Technological Research (TISTR), where he had served as deputy governor for seven years, to work for the United Nations Food and Agriculture Organisation (FAO). He retired in 1995. He is now the editor of AU Journal of Technology, Assumption University.
Dr Narong is married and has three children.

Yea I was amazed when I first heard about this not too long ago, and how some are recommending using coconut oil as part of food for health. I've always assumed coconut oil was very bad, considering that's what they use (used?) in things like movie popcorn which is one of the unhealthiest things around.
