Tomorrow's menu: sliced avocado, salmon, spring mix greens, peppers, home made salsa, all wrapped in a tortilla.
Hmmm . . . should I use a 'traditional' tortilla, or a tomato basil wrap?

How lucky can we get?
Today is Cinco de Mayo, Derby Day (Kentucky horse race) and also tonight we will have a 'super moon' which will be the biggest and brightest of the year.
To get the party started I'd like to share a couple of fruity mocktail recipes:
Chi Chi: mix 8 oz pineapple juice, 2 oz coconut cream, drop a marischino cherry on top and sip away! Warning: you might want to make a pitcher full!
Fuzzy Navel: half & half peach juice (mango?) and orange juice - yum!
