It can vary little depending on Context, but mostly
"Oh Ho" is used like in English "Wow".
You can hear "Oh Ho" a lot by Thai Commentators of a Football Game, when there was a really good Action by a Player etc.
"Oiiiii" is an expression when you are surprised but maybe a little bit in a scared way - so I don't really know what you would say in English, maybe something like "Ah".My interesting blog about Thailand at Thailand Blog ---> click here

Re: How do u say it's okay?
This site has a pretty good "selection" of Thai interjections and exclamations;
Here's a couple of the one's you asked about;
โอ้โฮ
โอ้โห
โอ๊ย
โอย
Even if you can't read a lick of Thai, you can see from looking at the spellings that the characters which make up the words aren't the same. This makes you pronounce the examples I gave with different tones and they have different meanings too.
Because you can't change the way you pronounce a Thai word (or you're sayin' a different word entirely
) interjections, exclamations, and ending particles are used to convey the emotive value of what's being said. They are a super important part of the Thai language.
Good Luck
