I am told that that way the garlicky flavor is enhanced.

    Actually, the curry paste already has garlic in itself, I would not add more. But for garlic fan, yes as Marie said, fry garlic first.

    I was taught to smash the garlic pod (skin on) using the heel of my hand over a wide knife blade. Ouch! Really that is the most painful part of stir-frying! Nowadays I sometimes cheat by peeling the garlic and rough chopping it.

    Pea, I still think a few online video lessons, in lieu of observing a real live person cooking, might be of help to get you started.

    Just gently pressing your hand firmly down on the knife blade with the garlic pod underneath until you hear it crack is enough to make it easy to peel-no need for violence!

    hahaha!

    You know I'm not a violent person! However, I just don't have the strength. Or perhaps some extra inches would put me enough above the counter that I could successfully push down. ok. I'll use the kitchen ladder next time.

    Just picture me smashing a pod of garlic with a ladder!

    I smash the garlic violently with big knife lol, then chop it, peel is off mostly. And this is the most fun part for me!!

    wow K Don, that is interesting, I like method 1, method 2 seems to be too much for little garlic to crush lol no violence needed!!

    I like the idea of warming the garlic in the microwave before peeling. I have just harvested garlic from my garden which I will roast with other veggies in bulk for soup. I need a quick method of peeling, so I'll give it a try.
