    Easy Thai dessert ( Banana in coconut milk )

    Few days ago I thought of my late grandma's cooking and one of the things she used to make was banana in coconut milk. It's very easy to make, ingredients are readily available at your local grocery store. Maybe someone out there would like to give it a try.

    Banana ( half way ripe so they won't be too soft after simmering )
    Coconut milk
    Coconut sugar or granulated sugar
    A pinch of salt ( optional )

    Bring coconut milk to a boil ( medium heat ) after a few minutes, add banana ( cut into 1.5 inch pieces ) Simmer for 3-5 minutes ( or to desired softness ) add sugar to taste and lastly a pinch of salt to "balance" the sharp sweetness from sugar.

    Noted : To prevent coconut milk from changing color to grayish you may boil banana in water first for 5-7 minutes, rinse and let cool completely. I enjoy mine with hulled mung bean added ^_^

    I like with pandan sago instead

    It's always good to remember good times with food grandma used to make.

    I'll have mine with yams or sweet potatoes. Or should it be taro?

    Either yam or taro is possible, even pumpkin.

    For banana, I prefer Thai banana called kluai nam waa กล้วยน้ำว้า as the texture is more sticky (?) and sweet, fully ripe but not too soft.

    Yes, pumpkin! I used to get it at the market in Bangkok. I would get whatever was available that day, but pumpkin would be good here and now because of the fall season.
